Picked up some beautiful local carrots yesterday from Fresh Off the Farm in Rockport.
Atomic Red - shocking red-orange when cooked due to high amount of lycopene.
Purple Haze - dark purple skin and orange core. Looks like a "tie-dyed" carrot.
Amarillo - appears white or pale yellow when raw, but turns bright yellow when cooked.
Mary, our Peruvian intern, said the carrots "look like Halloween". I guess I'm still guided by the subconscious Vampire...or was it Mr. Potato Head? (former Halloween costumes)
