Maine Lobster Salad with Ginger, Daikon, Bacon and a warm Ponzu dressing

This past July, I took part in the Maine Lobster Promotion Council's 2008 Lobster Chef of the Year competition.  My boss had given me the application for the competition and I filed it with some other random paperwork I had yet to read.  A week or so before the deadline, I ran across the application and decided to come up with a recipe to submit.
